Place the remaining soft, fleshy parts in a deep bowl, add 1 litre of drinking water, and leave to soak in the fridge overnight.

Transfer the soaked tamarind and its liquid to a deep saucepan and add 1 cinnamon stick. Simmer over a medium heat for 40 minutes.

Then, using a sieve, press the pulp through with a spoon to strain it. Add 1 litre of cold drinking water and a Splenda Sweet Minis to the strained tamarind drink and mix well.

Finally, add ice to a serving glass and pour the tamarind drink over it.
